My husband and I lately have been trying to expand on our range of recipes. I've been compiling recipes for years and years that “sounded delicious” but just didn't fit into our lifestyle at the time. I'm sure some of you can relate. One of my favorites is the Orange Wild Rice recipe below!
Until about a year ago, we were constantly on the go!
Between kids doing after school stuff, to the oldest starting his first job and then all of the family commitments, it's been crazy! This summer was crazy busy because we were house hunting, I had my full hysterectomy surgery, then we moved into our home less than 2 weeks after my surgery.
I have a binder worth of recipes that during the move somehow started growing mold (I think it got put in with something that spilled) so I just threw out the entire binder and recipes. So here we are, starting over. Lucky for us, MOST of the recipes that were in the binder, were saved and categorized in our OneDrive account.
We love quick, easy and delicious (duh!) meals that the entire family will love! Anything that doesn't take a whole lot of prepping, ingredients or crazy weird ingredients are the best for our family. I'm kinda partial to par or precooking some meals for an even easier day of cooking.
This Orange Wild Rice recipe is just that! ABSOLUTELY easy, quick and even tastes better the following day! It's going to be one of those recipes that you will keep on hand for a quick and easy lunch. If you're a meal prepper, you're going to want to make this! Make extra rice and you can add it as a side for dinners or add some proteins and you'll have a full on lunch.
Orange Wild Rice
- Cook rice according to the package instructions and allow to cool.
- Pour the cooked rice into a large bowl.
- Add cranberries, pecans, orange segments, and green onions to the rice and stir to combine.
- Add San-J Orange Sauce and mix well. Serve at room temperature or chilled.
- This can be made ahead of time and stored covered in the refrigerator for up to three days.
