While getting ready for summertime fun with my youngest son's friends coming in and out of the house, I like to have snacks for them. One of our favorite summertime treats is ice cream sandwiches. My boys could go through a box or two a week of sandwiches if I let them.
When we lived in the apartment, we really didn't have the space for any extra stuff, so now that we have the room, I'm making all of the things that the kids can just grab and go. We try to limit the sugar or sweet foods, but sometimes, it's good to have something sweet to taste.
I've always liked being that mom who has all of the kids over at the house hanging out after school or during the summer. My boys are known for giving out our address to their friends so they can have friends over to either help with homework or have some free time after dinner. Which I think is a good thing for the kids to have, they need to have as many friends as possible growing up. It brings more value to their lives and will help them develop skills for years to come.
I enjoy hearing them playing in the yard, shooting hoops, etc. My husband on the other hand is the “kids need to be outside and away from the house” type of guy. He likes to work in his barn without hearing the basketball bouncing against the walls and doesn't want to have to walk around bikes. He views our property as our zone and no one else needs to be in our zone.
We joke that he's going to be the old man sitting on the front porch yelling at all of the kids who just so much as walk past the house or have a sign that says “Stay off my Lawn“. While I'm going to be the neighborhood “gramma” who gives the kids sugar and sweet items like candies or a cookie (probably cookies, who am I trying to fool? lol) just to see them smile.
Ice Cream Sandwiches Using Chocolate Chip Cookies
Anyway, one delicious snack I love making for the kids is Ice Cream Sandwiches. It is a super easy recipe to make using Otis Spunkmeyer Chocolate Chunk cookies that everyone is sure to enjoy for years to come. Otis Spunkmeyer takes pride in its products to only provide the best flavors that their customers love time and time again.
Did you Know?
These large Otis Spunkmeyer cookies are made with molasses and dark chocolate from Barry Callebaut? That means it is quality dough that is used so the cookies taste great! They oven-bake each cookie just to perfection and package them to ship each cookie so they don't crumble in their case.
What I love about Otis Spunkmeyer cookies is that they are so yummy and don't have the additional yucky stuffy that some other cookies add. Their cookies are absolutely delicious and full of flavor, not too sweet, and have just the right amount of sugar.
I've made a bunch ahead of time for Easter Dinner this year since we're hosting. I am so excited to see my family and celebrate. We finally get to sit down and have a real holiday in our new home with everyone here. I just know that everyone is going to enjoy at least one of these delicious ice cream sandwiches with the best chocolate chip cookies. I'm sure my nephews & nieces will just love them.
Otis Spunkmeyer cookies would also be great for birthday parties, Mother's or Father's Day, cookouts or just to have in the freezer for the kids to grab in the summertime when they need a cool treat.
Want a variety?
