While getting ready for summertime fun with my youngest son's friends coming in and out of the house, I like to have snacks for them. One of our favorite summertime treats is ice cream sandwiches. My boys could go through a box or two a week of sandwiches if I let them.

When we lived in the apartment, we really didn't have the space for any extra stuff, so now that we have the room, I'm making all of the things that the kids can just grab and go. We try to limit the sugar or sweet foods, but sometimes, it's good to have something sweet to taste.

One snack i love making for the kids is ice cream sandwiches. And they are super easy to make using otis spunkmeyer chocolate chunk cookies.

I've always liked being that mom who has all of the kids over at the house hanging out after school or during the summer. My boys are known for giving out our address to their friends so they can have friends over to either help with homework or have some free time after dinner. Which I think is a good thing for the kids to have, they need to have as many friends as possible growing up. It brings more value to their lives and will help them develop skills for years to come.

I enjoy hearing them playing in the yard, shooting hoops, etc. My husband on the other hand is the “kids need to be outside and away from the house” type of guy. He likes to work in his barn without hearing the basketball bouncing against the walls and doesn't want to have to walk around bikes. He views our property as our zone and no one else needs to be in our zone.

We joke that he's going to be the old man sitting on the front porch yelling at all of the kids who just so much as walk past the house or have a sign that says “Stay off my Lawn“. While I'm going to be the neighborhood “gramma” who gives the kids sugar and sweet items like candies or a cookie (probably cookies, who am I trying to fool? lol) just to see them smile.

These Ice Cream Sandwiches are so easy to make, get the kids together and you can easily make the sandwiches with various toppings.

Instructions

  2.   4. As you add the ice cream onto 1/2 of the cut cookie using a medium-sized ice cream scoop, spread the ice cream then smoosh the other 1/2 on top & smooth out the ice cream.   6. After you're done with each individual sandwich, wrap in cling wrap then in foil, and add to a dish that will hold up in the freezer.   7. Let sit in a freezer for at least 2 hours so that the ice cream can freeze again. - Enjoy
