How to Make Delicious Air Fryer Spicy Chicken Tenders

Recently we acquired The Magic Chef XL Air Fryer and it has been amazing! We've made a few things in it and have been pleasantly pleased with the results. When you want to start eating healthier, you have to cut out some of the foods that can hold you back. Eating fried foods was one of our biggest problems. Deep-fried everything! Fries, chicken tenders/strips, pastelillos, fish, etc. If it wasn't deep-fried, it was cooked in oils. This can be okay if you use the correct oil and the correct amounts.

The first time we used our Air Fryer, it was really weird. I was reading the manual like “Wait, not a single darn drop of oil? Oh, this isn't going to end well at all! Nothing is going to taste right!” Let me tell ya, I WAS WRONG! I have never tasted such delicious air fryer chicken strips EVER! They were crisp, cooked all of the way through, and OMG juicy! (Recipe below)

Before I get to the recipe, I want to tell you my journey to eating a bit healthier and why it's relevant to the air fryer.

Over the past several years, my husband and I have gained quite a bit of weight. From the time we got married until about a year ago, I had gained close to 70lbs.

Between having a miscarriage, losing my mom to cancer, and my depression, I just “didn't care”. About this time of year in 2017, I stepped on the scale and it read a number I had NEVER seen before. I had officially hit 300 lbs. I cried. Literally, balled up on the floor in the bathroom, still wrapped in my towel after my shower, and cried so hard.

Start of Keto Diet

No one was home with me, but I think I was crying for a good hour. After the hour of self-pity crying on the floor. I stood on the scale again. I knew it wasn't going to tell me a different number, but I took a picture of the scale, and text my husband… “I'm DONE! I can't let myself go anymore. We need to do something!”

We had researched and researched and came across The Ketogenic Diet.

I talked with my Primary Care Physician and we agreed to do a modified version which is called a “Lazy Keto” diet. Because of some of my medical problems, going too high in fat could cause me more problems than not. So we modified it a little more to have a more balanced protein/fat ratio while keeping my carbs down.

Since we started our version of The Keto Diet a year ago, we've since “relaxed” even more. I have been steadily losing a pound or two monthly, my husband, on the other hand, has hit a plateau a bit. Our favorite recipe is Spicy Southwest Inspired Air Fryer Chicken Strips. I've altered the recipe a bit from the book that comes with the Air Fryer, and my family LOVES it!

Yes, I know the recipe isn't Keto. Remember, we can't eat full-on Keto! What works for one person, won't work for someone else. That doesn't mean I'm not doing the full Keto Diet.

Deliciously Crunchy and Juicy Air Fryer Chicken Strips

Yield: 4 People

Spicy Southwest Inspired Chicken Strips

Air Fryer Chicken Strips: Delicious, Spicy, Crunchy and Juicy - FP

I found the original recipe to this in my Air Fryer Recipe book. This is an adaptation to that recipe.

Prep Time 10 minutes
Cook Time 30 minutes
Resting Time 5 minutes
Total Time 45 minutes



  • 2 lbs Chicken Breast, sliced in strips
  • 2 cups Panko Bread Crumbs, Plain
  • 2 tbsp Dried Chopped Onion Flakes
  • 2 packets Goya Foods Sazon, Coriander & Annatto (Con Culantro y Achiote)
  • 1 tsp Crushed Red Pepper Flakes
  • 1/2 tsp Himalayan Pink Salt
  • 1/2 tsp Black Pepper
  • 1 cup Mayonnaise, (Do NOT use Miracle Whip)
  • 1/4 cup Brown Mustard



  1. Mix Dry Ingredients together in a shallow bowl
  2. Pat Chicken Strips dry with paper towels & discard towels
  3. Mix the Mayonnaise & Mustard together then pour into a gallon freezer Ziploc bag
  4. Add chicken strips into the Mayonnaise & Mustard mixture and make sure all of the strips are coated really well in the mixture (super important)
  5. Remove strips and coat in the dry ingredients
  6. Place coated Chicken Strips into the Magic Chef XL Air Fryer, in a single layer (Do Not Overcrowd). - Will take at least 2-3 batches depending on the thickness & length of the strips.
  7. Air Fry for approximately 16 minutes at 360F degrees
