Over the past several years, my husband and I have gained quite a bit of weight. From the time we got married until about a year ago, I had gained close to 70lbs. Between having a miscarriage, losing my mom to cancer, and my depression, I just “didn't care”. About this time of year in 2017, I stepped on the scale and it read a number I had NEVER seen before. We had researched and researched and came across The Ketogenic Diet.

Because of some of my medical problems, going too high in fat could cause me more problems than not. Since we started our version of The Keto Diet a year ago, we've since “relaxed” even more. I have been steadily losing a pound or two monthly, my husband, on the other hand, has hit a plateau a bit. As with any other diet, if you don't maintain it, work with it, and keep it going, you will hit a plateau or you will gain.

Our favorite recipe is Spicy Southwest Inspired Air Fryer Chicken Strips. I've altered the recipe a bit from the book that comes with the Air Fryer, and my family LOVES it!
Yes, I know the recipe isn't Keto. Remember, we can't eat full on Keto! What works for one person, won't work for someone else. That doesn't mean I'm not doing the full Keto Diet.
Deliciously Crunchy and Juicy Air Fryer Chicken Strips
Spicy Southwest Inspired Chicken Strips
- 2 lbs Chicken Breast sliced in strips
- 2 cups Panko Bread Crumbs Plain
- 2 tbsp Dried Chopped Onion Flakes
- 2 packets Goya Foods Sazon Coriander & Annatto (Con Culantro y Achiote)
- 1 tsp Crushed Red Pepper Flakes
- 1/2 tsp Himalayan Pink Salt
- 1/2 tsp Black Pepper
- 1 cup Mayonnaise (Do NOT use Miracle Whip)
- 1/4 cup Brown Mustard
- Mix Dry Ingredients together in a shallow bowl
- Pat Chicken Strips dry with paper towels & discard towels
- Mix the Mayonnaise & Mustard together then pour into a gallon freezer Ziploc bag
- Add chicken strips into the Mayonnaise & Mustard mixture and make sure all of the strips are coated really well in the mixture (super important)
- Remove strips and coat in the dry ingredients
- Place coated Chicken Strips into the Magic Chef XL Air Fryer, in a single layer (Do Not Overcrowd). - Will take at least 2-3 batches depending on the thickness & length of the strips.
- Air Fry for approximately 16 minutes at 360F degrees
